Vertical Roasted Chicken

A Few Words…

This is pure comfort food – healthy style!

Sometimes I forget that you don’t have to spend hours in the kitchen to get a delicious meal. This is one of those meals!

You can use the rub recipe that I’ve enclosed, a brand that is store bought or just mix together some paprika, garlic, salt and pepper – whatever you put on the chicken, it will be fabulous!

Not only will you have a delicious dinner, but you might have leftovers! Planning made simple:)

Vertical Roasted Chicken

Serves 3-4 people

  • 1 whole chicken, 4-5 pounds
  • 1/4 cup paprika
  • 1 tbs. brown sugar
  • 1 tbs. kosher salt
  • 1 1/2 tsp. freshly ground black pepper
  • 1 tsp. cayenne
  • 1 tsp. dry mustard
  • 1 tsp. garlic powder
  • 1 tsp. onion powder


Make the rub by combining the paprika, brown sugar, salt, pepper, cayenne, dry mustard, garlic and onion powder with a whisk in a small bowl. I like to keep my homemade rubs in a small glass jar and store it in the pantry so I can use it for other recipes too.

Rinse the chicken and pat it dry. Rub the outside and inside of the chicken cavity with the rub. If you don't make your own, use store bought or a mixture of paprika, garlic, salt and pepper.

Remove the top 2 racks in your oven and keep the last rack on the bottom shelf. Preheat the oven to 375°F. Place the chicken on the vertical roaster and place it inside an aluminium foil pan (for easy clean up!) Add a bit of water to the bottom of the pan so when the fat drips down, it won't burn.

Roast uncovered for about 1 hour and 30 minutes or until the internal temperature reaches 165°F with an instant read thermometer.
