Tomato, Peppers & Avocado Salad

A Few Words…

I had friends over for dinner the other night and although I had two yummy salads on my menu, I wanted to add another salad. You can never have too many!

This is such an easy side dish to put together and the ingredients don’t have to be accurate-you’re not baking a cake!

I find that adding bright salads like this one,  are always good to add to meals. Not only do they add variety, but I find that having healthy choices available really helps me to not over indulge in all the other ‘goodies’ that are on the table-this tip may help you too!

Tomato, Peppers & Avocado Salad

  • 2 cups of cherry tomatoes, cut in half
  • 1 red pepper, cleaned and diced
  • 1 orange pepper, cleaned and diced
  • 1 yellow pepper, cleaned and diced
  • 2 avocados, diced
  • 3 tbs. olive oil
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • Salt and pepper, to taste


Put the tomatoes and peppers in a bowl and mix well.

Whisk together the olive oil and spices in a small bowl. Pour, as needed, into the vegetables and mix well. Adjust the seasonings if you have more vegetables in your salad.

Add the avocado to the salad right before serving and toss gently.
