I love adding bright salads to my family meals and when I have company over. Not only does it add variety, but I find that having healthy choices available really helps me to not over indulge in all the other ‘goodies’ that are on the table- maybe this tip may help you too!
This is such an easy side dish to put together and doesn’t take long to make!
Put the tomatoes and peppers in a bowl and mix well.
Whisk together the olive oil and spices in a small bowl. Pour, as needed, into the vegetables and mix well. Adjust the seasonings if needed or if you added more vegetables to your salad.
Add the avocado to the salad right before serving and toss gently.
