And now it doesn’t! I had such good intentions when I bought it a few days ago. I forgot to use it and when I opened up my fridge wanting to cut it into florets for my salad, the broccoli looked sad. Has that ever happened to you? Please tell me that you didn’t throw it out! If you did, hopefully next time you won’t.

I don’t like wasting food – especially when all the fruits and veggies have been so expensive lately. This is what you can do – take your veggies and place them on a baking sheet lined with parchment paper. Drizzle a little olive oil on top and then roast them in the oven! Some veggies may take a little longer so depending on what you have, it will usually takes 30 – 45 minutes, but then it’s done and you’ll fabulous roasted veggies. I made a huge batch of sliced tomatoes, broccoli and onions and used half for a frittata that I baked. The rest is in a container that I’ll use in my quinoa salad for supper.
There are so many things that you could do with with your roasted veggies – add them to your pasta dishes, in your stir-frys, even in your omelets. Yum!!
