A Few Words…

Fresh and yummy salad that’s ready in 5 minutes!

I love meal prep and often have a few things in glass storage containers in my fridge and ready to use for during the week! By having cooked quinoa, fresh fruit and some greens, your salad can go from blah to spectacular!

What’s great about this, by changing up a few ingredients you can have a new salad taste easily. Just what I love!

The other thing, preparing homemade salad dressing is a breeze and you can replace your store bought one for a healthy version. Once you decide to try it, you won’t know how you never made your own dressing before.

My Super Simple Salad

  • 3-4 cups of your favorite mix of salad greens
  • 1 cup of edamame beans
  • 1 fresh mango cut into chunks
  • 1 cup of cooked quinoa
  • 1/4 cup of raw pumpkin seeds
  • 1/4 cup of raw sunflower seeds

Toss all the ingredients in a large serving bowl and adjust the quantities as needed! You can replace the mango with fresh strawberries, peaches, blueberries or raspberries.

Add Balsamic Vinaigrette as needed and mix well.

Homemade Balsamic Vinaigrette


  • 2 tbs. Dijon mustard
  • 2 tbs. balsamic vinegar
  • 2 tbs. freshly squeezed lemon juice
  • 2 tbs. maple syrup
  • 3/4 cup canola oil
  • 1/2 tsp. garlic powder
  • Salt and pepper, to taste

Put all the ingredients in a glass storage jar and shake. Use as needed and store the rest in the fridge.
