I love Fall – don’t you?
Maybe it’s the beautiful colors of the leaves as it changes or the fresh crisp air, I’m not really sure. I do know one thing, with Fall comes beautiful displays of all the different varieties of squashes!
Butternut squash can be tricky to cut, but the outer layer of the skin and other smooth edged squashes can easily be removed with a vegetable peeler. This makes it so much easier to cut it unto cubes or slice into crescent shapes before roasting them. Some of the other squashes with the harder skins can be difficult to cut. I’ve been told that if you microwave it for a few minutes, it makes it easier to cut in half.
Butternut squash happens to be my favorite, but I love experimenting with different ones. My oven will be on all weekend long cooking up a storm. Be sure to be on the lookout for some new recipes from me!
