Do you have a favorite breakfast?

There’s something about oatmeal that’s so satisfying and gives me staying power all day long. Although I love hot oatmeal and steel cut oats, I do like variety and often will make overnight oatmeal.

How do you like your oats? There are so many different ways to make it and by changing up even one ingredient, it will be like having a new breakfast everyday.

By preparing your breakfast the night before, you won’t be rushed in the morning and will still have plenty of time to get your other morning chores done.

As long as you remember the night before to make it, you’re good to go in the morning!

Simple Overnight Oats with Peanut Butter

Serves 1

Ingredients:

  • 1/3 cup whole rolled oats
  • 1/3 cup unsweetened vanilla almond milk (you can use milk or other non dairy alternatives)
  • 1/3 cup Greek plain yogurt (or regular plain)
  • 1/2 banana, chopped
  • 1 tsp. chia seeds
  • 1 tsp. peanut butter
  • Cinnamon to taste
  • A few chopped peanuts on top (optional)

Directions:
Add all ingredients except the peanut butter and cinnamon to a bowl or Mason jar and mix thoroughly. Cover and refrigerate overnight. In the morning add a swirl of peanut butter on top and sprinkle with cinnamon. If you find it too cold, microwave for 5 seconds to get the chill out.

Notes:
You can make this gluten free by using gluten free oats!
