A Few Words…

What’s a salad without dressing? Bland!

Ditch the low fat, no fat, no taste salad dressings and instead opt for a homemade one or one that has real ingredients listed on the label. Store bought dressings often use poor quality ingredients, chemicals and preservatives, so read the ingredient label if you are buying salad dressings. If the list is long or there are ingredients that you can’t pronounce or know what they are, put it back on the shelf!

Salad dressings are so simple to make. Blend some oil, vinegar and spices together and that’s about it. Place all the ingredients in a Mason jar, shake it up and store it in the fridge.

Shari’s Homemade Balsamic Vinaigrette

Ingredients:

  • 2 tbs. Dijon mustard
  • 2 tbs. balsamic vinegar
  • 2 tbs. freshly squeezed lemon juice
  • 2 tbs. maple syrup
  • 3/4 cup canola/ vegetable oil
  • 1/2 tsp. garlic powder
  • Salt and fresh pepper, to taste

Directions:
Put all the ingredients in a Mason or other glass storage jar and shake vigorously. Use as needed and store the rest in the fridge.


Fattoush Salad Dressing

Ingredients:

  • Juice of two lemons
  • 2 garlic cloves, minced
  • 1/3 cup olive oil
  • 2 tsp. za’atar or combination of other Middle Eastern spice blends (sumac, allspice, cinnamon)
  • Salt and pepper, to taste
  • Zest of 1 lemon
  • Directions:
    Put all the ingredients in a Mason or other glass storage jar and shake vigorously. Use as needed and store the rest in the fridge.


Basic Vinaigrette

Ingredients:

  • 2/3 cup olive oil
  • 1/3 cup white wine vinegar
  • 1/2 tsp. minced garlic
  • 1/2 tsp. dried oregano
  • 1 tbs. chopped parsley
  • Salt and pepper, to taste
  • Directions:
    Put all the ingredients in a Mason or other glass storage jar and shake vigorously. Use as needed and store the rest in the fridge.
