- 1 cup cooked quinoa
- 1 bag of frozen vegetables (I used Trader Joe's Soycutash)
- 2 tbs. olive oil
- Juice from 1/2 of a fresh lemon
- Salt and pepper, to taste
Remove the cooked quinoa from the freezer and let thaw. Take your bag of frozen vegetables and thaw according to the package directions.
Whisk together the olive oil, lemon juice, salt and pepper in a small bowl.
Mix the cooked quinoa and thawed vegetables together and add the dressing. Serve at room temperature.
