Psilokomeni Salad

I love this salad and always order it from my favorite Greek restaurant, so I decided to re-create it!

This simple salad is usually made with a combination of romaine lettuce, scallions, dill, and cucumbers and is going to be my new favorite salad to serve this summer when I’m making bbq’s!

So, if you’re going to eat at my house – expect it!

Ingredients:

Salad:

  • 2-3 romaine hearts
  • 4 scallions (I call them green onions!)
  • 1/2 - 1 bunch fresh dill
  • 1 English cucumber

Dressing:

  • 3/4 cup extra virgin olive oil
  • 3 tbs. fresh lemon juice
  • 1/4 tsp. sea salt
  • 1 tsp. dried oregano

Directions:
Wash and dry to romaine leaves whole, the cucumber and scallions. Depending on how big of a salad you want, take a bunch of whole romaine leaves, slice down the middle lengthwise and then slice thinly. Thinly slice the scallions and dice the cucumber into small pieces. Wash and dry the fresh dill, chop finely and add all the chopped ingredients to a large salad bowl. Mix everything well.

Add the dressing ingredients in a glass jar and shake vigorously.

When ready to serve, add the dressing to the salad and toss well. Store leftover salad dressing in the fridge to use for another time!
