We have chicken and fish and fish and chicken a lot in my house.
I like to experiment and change things up. I keep tons of different rubs and spices in my cupboard that I use on veggies, in sauces, for chicken, meat and fish recipes. I also keep lots of lemons! And that’s what I used to come up with this fabulous marinade that was so easy and so flavorful!!
It was a huge hit and I made roasted potatoes to go with it and of course a salad was on the table too.
The chicken was so moist and tasty, but don’t take my word for it, try it for yourself!
Combine the garlic, paprika, oregano, thyme, lemon juice, olive oil and brown sugar in a small bowl and mix well.
Place the chicken and onions in a large roasting pan or glass Pyrex baking dish. Pour the marinade over the chicken and coat well. Cover and place in the fridge for at least one hour so the flavors intensify.
Preheat oven to 400°F and bake uncovered for 1 hour or until the chicken is cooked thoroughly and golden in color.
