On Friday and I took out a cut up chicken for supper and had no clue what I was going to do with it! Do you find that you go through these same thoughts too?
I have tons of different rubs and spices in my cupboard that I always use for roasted chicken, but I wanted to try a new flavor. I had lemons in my fridge and with that, I came up with this great marinade that was so easy and so flavorful!!
It was a huge hit and I made roasted potatoes to go with it and of course a salad was on the table too. Mmmmm, the chicken was so moist and tasty, but don’t take my word for it, try it for yourself!

Combine the garlic, paprika, oregano, thyme, lemon juice, olive oil and brown sugar in a small bowl and mix well.
Place the chicken and onions in a large roasting pan or glass Pyrex baking dish. Pour the marinade over the chicken and coat well. Cover and place in the fridge for at least one hour so the flavors intensify.
Preheat oven to 400°F and bake uncovered for 1 hour or until the chicken is cooked thoroughly and golden in color.
