Orange Ginger Tofu

A Few Words…

This is such an easy tofu dish and is full of flavor!

I love keeping prepared foods (that I make!) in the fridge, and this is one of those dishes that is great for lunch or dinner. The fragrant ginger sauce is so yummy over delicious over steamed rice and veggies.

You can pair the tofu with rice and steamed vegetables or soba noodles or even as part of your own Buddha Bowl.

Any way you decide to serve it it, it will be scrumptious!

Ingredients:

  • 16 oz. extra firm tofu
  • 1 tbs. grated fresh ginger
  • 2 garlic cloves, minced
  • 1/2 red onion, grated
  • 1 cup orange juice
  • 1/4 cup rice vinegar
  • 1/4 cup low sodium tamari
  • 2 tbs. sesame oil
  • 2 tbs. maple syrup

Directions:
Wrap the block of tofu in paper towels to squeeze out the excess water. I like to wrap it, and then put a heavy pot or can on top of the tofu for about 1/2 an hour to drain the liquid.

When ready, cut the tofu into approximately 2 inch pieces, about 16 in total, and place in a shallow glass baking dish.

Whisk the rest of the ingredients together in a bowl and then cover the tofu with it. Marinate in the fridge for at least 1 hour.

Preheat the oven to 350°F. Make sure that the tofu is in a single layer and bake in the marinade for 15 minutes. Turn the pieces to the other side and bake for another 25-30 minutes, until the tofu is golden.
