I admit, I am a creature of habit and am very happy and content to just alternate between a few of my favorite breakfasts every morning. Although that’s true, I have to remind myself that my body needs a change every once in a while, so I try experiment with new things.
This is sooooo delicious! Oatmeal, quinoa and apples baked together to make a perfect breakfast that’s full of flavor and packed with protein and fiber. So yummy and bonus is that you’ll have extra that you can store in the fridge or share with others!

Preheat oven to 350°F. Lightly grease a 7 x 11 baking dish.
In a medium bowl, mix together the oatmeal, uncooked quinoa, cinnamon and nutmeg. Pour into the greased dish. Arrange the sliced apples on top and sprinkle the raisins on top.
In a small bowl, beat the eggs. Whisk in the vanilla extract, almond milk and maple syrup. Pour the liquid mixture evenly over the dry ingredients and let sit for 5 minutes to let the liquid absorb. Sprinkle cinnamon evenly on top.
Bake for 50-60 minutes until set.
