Quinoa is simple to make – really!
I’ve been getting many requests on how to cook quinoa, so here’s my foolproof recipe.
I happen to love quinoa because it’s healthy and so versatile. You can use it plain and toss 1/4 cup into your ready made salads, make a quinoa salad (I have tons of recipes that you can find here) use it in baking, cooking and it freezes very easily.
I love having a container of cooked quinoa in my fridge because it gives me options for having healthier choices and helps to change things up a bit.
Remember – variety is the spice of life!
Yields approximately 3 cups of cooked quinoa
Bring the water and quinoa to a boil in a medium saucepan. Once it starts to boil, turn the heat to low, cover the pan and cook for 12 minutes - do not lift the lid or stir the quinoa.
When the 12 minutes is over, turn the heat off and leave the covered pot on the same burner for 15 minutes. Then, fluff the cooked quinoa with a fork and allow it to cool before using.
Once cooled, use fresh or freeze in 1 cup portions in freezer baggies.
