It’s Time to Get Rid of the Excuses
There was a time in my life when breakfast meant a quick cup of coffee and a ‘bar’ to go or just coffee. It’s crazy how priorities change and seriously, I think I need my breakfast more than any other meal of the day!
I like to vary my breakfasts because I find that my body (and head space!) needs a little more oomph and fuel in the mornings. Here are a few of my go to breakfast choices that give me staying power and help me from being bored of what I’m eating:
- 1 piece of whole wheat/grain toast with avocado, a hard boiled egg and veggies on the side
- Post Shredded Wheat and Bran (mini) or Raisin Bran with unsweetened vanilla almond or cashew milk
- Oatmeal
- English muffin with a nut butter
There is one other breakfast that I absolutely love and it gives me great staying power – Steel Cut Oats! Have you ever had that? I know what you’re thinking – it takes too long to make! Usually that’s what stops me from having it because more often than not, I am racing out of my house. But, it doesn’t have to be that way!!
The Solution:
Make 4 portions at once and that way you’ll have it ready for breakfast or ready to bring with you to work. And it’s so easy to make.
The Recipe:
Mix 1 cup of dry steel cut oats with 4 1/2 cups of water in a medium saucepan and put the heat on high. I like using unsweetened Vanilla Almond or Cashew Milk in place of water. When it starts to boil, stir the oats and turn the heat on low.
While my steel cut oats are cooking, I add in a few chopped medjool dates – mmmm:) Leave the saucepan uncovered while it cooks and stir every once in a while. It only takes about 25-30 minutes for it to be done. And then when it’s ready you can portion it out into 4 servings; one to be eaten and 3 others that you could put in your fridge for another time.
No time in the morning? Whatever you need to do, whether it’s prepping a meal or cooking it, do it the night before. There’s always a way to find the time, but the question is, do you think that you are worth it? YES, YOU’RE SO WORTH THE EFFORT!!!
