Instant Pot Steel Cut Oats

A Few Words…

I love breakfast and it really is my favorite meal of the day.  I know that sounds crazy, but it’s true!

I didn’t realize just how much I would miss it until I found myself with no stove during my kitchen renovation. Luckily I was reminded that I had an Instant Pot and I had to try to make my favorite breakfast in it. (If not, I did have plenty of kitchen offers from my family and friends, but I hate imposing!)

This recipe was so easy and so yummy! Bonus was that I could walk away from the Instant Pot and not have it ‘bubble’ over on to my stove top and make a mess like it usually does!

Instant Pot Steel Cut Oats

Yields: 6 servings

Ingredents:

  • 1 1/2 cups steel cut oats
  • 6 3/4 cups of unsweetened vanilla almond milk (you can use any non dairy milk, water or a combination of water and non dairy milk)
  • 4 Medjool dates, coarsely chopped and pitted
  • 1 tbs. chia seeds
  • 1 tbs. whole flax seeds

Directions:
Combine the steel cut oats, non dairy milk, chopped dates and seeds in the bowl of a 6-quart Instant Pot and stir. Secure the lid and turn the steam release valve at the top to "sealing". If using a different type of machine, please use their cooking instructions.

Press the Manual or Pressure Cook button according to your machine. I used the Manual setting for porridge, and then let the machine do it's magic!

When the cooking cycle is complete, allow the pressure to naturally release or turn the steam release valve to "venting" to release any remaining pressure. When done, carefully remove the lid and stir the oats to incorporate any liquid that has risen to the top. It will thicken up when you stir it!

This is great to store in the fridge in individual containers to have during the week. To reheat, splash the cooked oats with some liquid and heat in the microwave.

Optional Toppings:
After I reheat my steel cut oats, I love alternating toppings just to change it up a bit. You don't need to add ALL the toppings at one serving but here's a few ideas:
- 1 tbs. chopped nuts
- 1 tsp. peanut butter swirled into the hot steel cut oats
- some cinnamon
- 1/2 a banana or some berries
- grated apple

Notes:
If you want to make 4 servings, use 1 cup steel cut oats with 4 1/2 cups liquid!
