How pretty are these carrots?

I love roasted vegetables and this is a perfect side dish if you’re looking to add healthier options to a meal.

Delicious tossed with just olive oil and sea salt, but you can easily spice it up by adding some chili flakes or sweeten it up by adding a touch of maple syrup before baking!

Either way, it will look amazing on your table and is a great addition to your holiday meal. It also tastes great the next day, that is if there are any leftovers!

Heirloom Roasted Carrots

Serves 8-10


  • 1-2 pounds of heirloom or heritage carrots
  • 1 tbs. olive oil
  • Pinch of sea salt


Preheat the oven to 425°F. Line a baking sheet with parchment paper and set aside.

The carrots don’t have to be peeled, just scrub and dry them well. Toss with olive oil and then lay them flat on the covered baking sheet. Sprinkle with salt.

Bake uncovered for about 45-50 minutes, turning the carrots over halfway. Roast until the carrots have become tender and caramelized.

Delicious warm or served at room temperature.
