A Few Words…

What do you do with a fresh cabbage and fennel? You add a few other ingredients like apple and shredded carrots and you have a healthy salad!

We had it for supper on top of a chicken burger in a bun! Amazing!! You can definitely have it with a regular hamburger or turkey burger!

This is such a yummy side dish too!

Healthy Slaw

Serves 6-8


  • 1 small green cabbage, shredded
  • 1 medium sized fennel bulb, sliced thinly
  • 1 carrot, shredded
  • 1 apple, peeled, cored and cut into matchsticks
  • 2 tbs. apple cider vinegar
  • 1/4 cup canola or vegetable oil
  • 1 tbs. juice from a fresh lime
  • 1 tbs. maple syrup
  • Salt and pepper, to taste

In a large bowl mix together the shredded cabbage, sliced fennel, shredded carrot and cut apple pieces.

Whisk together the apple cider vinegar, oil, lime juice, maple syrup and the salt and pepper. Alternatively, put these ingredients in a jar and shake vigorously.

Pour the dressing over the slaw mixture and mix well. Let rest at room temperature for at least 20 minutes to allow the flavors to meld.
