Healthy Power Bowl
Lunch Time!
When working from home my ‘go to lunch’ used to be a bowl of fruit and some Greek yogurt topped with a sprinkle of my homemade granola. That and a cup of coffee was my lunch. As I became more organized with food prep and keeping certain staples in my fridge, my lunches now have more oomph & take less time to prepare!
My fridge is always stocked with ready made packages of cooked beets, goat cheese, veggies, hard boiled eggs, shredded cheese and other goodies.
What to do, what to do? I decided to make myself a healthy power bowl and put it in a pretty bowl that I usually only use for company.*Note to self – use nice dishes more often!
Here’s what I put in my Healthy Power Bowl:
- Cucumber slices
- Beets, rinsed with cold water and sliced (I buy packaged cooked beets and store the rest in a glass container)
- Cooked tri-colored quinoa, already made and stored in a glass container in my fridge.
- Avocado slices
- Goat cheese
- Handful of walnuts
- Drizzle of balsamic glaze
What an amazing healthy lunch! And all it took was 5 minutes to put together. So satisfying because it’s full of protein, antioxidants, healthy fats and veggies. And any of these ingredients can be substituted with other veggies or protein! Mindful healthy eating!
