Healthy Power Bowl
What do you usually have for lunch?
When I’m working from home my ‘go to lunches’ are usually a bowl of fruit, some Greek yogurt topped with a sprinkle of my homemade granola. And I’m good with that and a cup of coffee. But, my fridge had other plans for me.
When I opened the fridge door I saw a package (actually 2!) of julienned beets that I purchased to use for a side dish salad for Passover. I was serving so much at my Seders so I pushed it to the back of the fridge…and there it was!
What to do, what to do? I decided to make myself a healthy power bowl and use a pretty new bowl that I just purchased at one of my favorite stores in Montreal, Zone. Are you looking for some pretty bowls? You can get them here too!
Here’s what I put in my Healthy Power Bowl:
- Cucumber slices
- Julienned beets, rinsed with cold water and drained
- Cooked tri-colored quinoa, already made and stored in a glass container in my fridge. If you need glass storage containers, you can buy them here.
- Avocado slices
- Goat cheese
- Handful of walnuts
- Drizzle of balsamic glaze
What an amazing healthy lunch! And all it took was 5 minutes to put together. So satisfying because it’s full of protein, antioxidants, healthy fats and veggies. Mindful healthy eating!
