Healthy Apple Muffins

A Few Words…

I love the smell of freshly made muffins. Apples and cinnamon give the house such a warm feeling and with Fall coming, it was time to try a new recipe!

This is such an easy recipe and the shredded and diced apples give it a wonderful texture. There’s nothing like getting little bits of apple in every bite!

So delicious and one of my favorites!!!

Healthy Apple Muffins

Yields: 12 large muffins


  • 1 3/4 cups flour (I used a combination of 3/4 cup white flour and 1 cup whole wheat flour)
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • pinch of salt
  • 1 cup grated apple, squeeze moisture out before using (I used 2 medium macintosh apples)
  • 1 large apple, peeled, cored and diced
  • 1/3 cup canola or vegetable oil
  • 1/2 cup maple syrup
  • 2 eggs
  • 1/2 cup plain Greek yogurt
  • 1/2 cup applesauce
  • 1 rsp. vanilla extract

Place the rack in the middle of the oven and preheat to 425°F. Line a 12 cup muffin tin with parchment paper liners or grease with butter or non-stick spray. You can also use a silicone muffin pan that doesn't need to be lined.

Whisk together the flour, baking powder, baking soda, cinnamon and salt in a medium bowl. Add in the grated and chopped apple and stir until all combined.

In another medium bowl, whisk together the oil and maple syrup until it's creamy. Add the eggs, Greek yogurt, applesauce and vanilla extract and mix well.

Gently pour the wet ingredients into the flour mixture and stir just until the flour disappears - do not over mix. Divide the batter into the muffin cups.

Bake for 14-16 minutes on the middle rack. The muffins should be golden and the center dry when inserted with a cake tester.
