This is a delicious pasta salad that can be served as a side dish or as a main dish if you add protein to it!
Whenever I have company over for supper I always make something new. After all, if you can’t experiment new dishes on friends, then who can you test it out on (besides family members)?
This was even more delicious than I anticipated. I used a whole package of pasta because I wanted leftovers for my family and pasta dishes keep well. You can always alter the ingredients and use less pasta or more beans when you make it.
This is a yummy dish that takes no time to prepare. It was a hit! My guests loved it and so did my family when I served it the following day!

Cook pasta according to the package directions. Add the cut French beans to the boiling water during the last 2 minutes of the cooking time. When ready drain and rinse the pasta and beans with cold water and drain well.
Place the drained pasta and beans in a large serving bowl. Add the chopped thyme and 1 tbs. of lemon zest to the bowl and toss.
Whisk together the chopped pistachios, white wine vinegar, chopped green onions, garlic, salt, pepper and 2 tsp. lemon zest in a small bowl. Slowly add the olive oil and whisk until blended.
Pour over the pasta and toss until coated well. Top with some chopped or whole pistachios and serve at room temperature.
