Endless Possibilities with Ground Chicken
If you ask anyone in my house what I usually make for supper, the answer would be chicken or fish. It’s true!
Not that it’s a bad thing, but after a while it gets boring eating chicken (or fish!) made the same way all the time. That’s why I like to change things up a bit and experiment. Have you ever used ground chicken? There’s so many different ways to use it.
2 Ways I Cook with Ground Chicken:
- In the summer I mix ground chicken with fresh parsley, grated onion, Italian seasonings and panko crumbs and then I shape them into patties to grill on the bbq. Mmmmmm – just delicious!
- Another thing that I love to make is chicken meatloaf. Check out this fabulous recipe for Chicken Couscous Mini Meatloaves that was inspired by a recipe from the Women’s Philanthropy Mosaic Cookbook. Although the recipe calls for cooked couscous, if you have a gluten sensitivity/intolerance or prefer to use quinoa, you could easily swap the couscous and use approximately 1 1/4 cups of cooked quinoa.
