Easy Pasta with Chicken

A Few Words…

I’m a big fan of freezing leftovers – chicken in particular. Once thawed (or defrosted in the microwave) you can use it in a variety of easy dishes!

This dish was ready in under 30 minutes and there were leftovers for the next day too!

Delicious and easy to make – my favorite type of meal!

Easy Pasta with Chicken

Serves 3-4 people


  • 8 oz. package of pappardelle pasta (I used Trader Joe's Lemon Pepper Pappardelle Pasta)
  • 1-2 tbs. olive oil
  • 1 garlic clove, minced
  • 2 Vidalia onions, thinly sliced
  • 1-2 cups cooked chicken, cut in pieces
  • 1/4-1/2 cup reserved pasta water


Cook the dried pasta, according to the directions, in a large pot of boiling water. When the pasta is ready, remove 1/2 cup of the cooking water and set aside. Drain the pasta and set aside.

Heat the oil in a large skillet over medium heat. Add the garlic and onion slices and stir until fragrant and the onions have softened. Add the chicken to the onions and mix well.

Toss the chicken with the pasta and the cooking water as needed.
