A Few Words…

There’s nothing like fresh fish, a few fresh herbs and a splash of lemon to make an incredible meal.

This fish was so delicious that even my husband Charles, who doesn’t eat fish, tasted it while cooking it on the barbecue and again while we were eating supper!

Easy and delicious – you can even cook it in the oven if you don’t barbecue!

Serves 2

Ingredients:

  • 2 pieces of fresh cod fillets
  • 2 tbs. fresh lemon juice
  • 1 tbs. olive oil
  • 2 tbs. assorted fresh herbs - I used basil, oregano and mint
  • 1 garlic clove, minced
  • Fresh lemon zest
  • A pinch of salt and pepper

Directions:
Whisk together the fresh lemon juice, olive oil, fresh herbs, garlic, zest and salt and pepper in a small bowl.

Place the cod fillets in a large Ziploc baggie and pour the marinade covering the fish. I prepared my fish up to this point earlier in the day, and let it sit covered in my fridge until ready to barbecue.

Barbecue on a hot grill until the fish is opaque and flakes easily.

Alternatively, you can bake the fish fillets in the oven for about 20 minutes.
