Makes about 8 cups
Ingredients:
- 7-8 apples, peeled, cored and cut into bite-sized chunks (I used a mixture of different varieties)
- 4 cups chopped rhubarb
- 2 cups of water
- 1/2 cup maple syrup
- 2 cinnamon sticks
Directions:
Place the chopped apples and rhubarb in a large stock pot. Add the water a bit at a time -it should cover the fruit, the maple syrup and the cinnamon sticks and mix well. Bring to a boil on high heat, then reduce the heat to low, partially cover the pot, and let simmer for 30-40 minutes, until the apples are soft.
Once cooked, remove from heat. If you like a chunkier applesauce, mash with a potato masher, or process in a blender until desired consistency. I made it chunky!
