Cinnamon Rhubarb Applesauce

A Few Words…

I know rhubarb has been around forever, but I never noticed it before. This summer I really was on the lookout for new finds and found rhubarb!! New finds always lead to new recipes!

I loveeeeee this applesauce that has little chunks of rhubarb in it. It’s tart, sweet and just so delicious alone or mixed in with oatmeal (so yummy!)

This is so easy and quick to make that you may make homemade applesauce from now on!

Cinnamon Rhubarb Applesauce

Makes about 8 cups


  • 7-8 apples, peeled, cored and cut into bite-sized chunks (I used a mixture of different varieties)
  • 4 cups chopped rhubarb
  • 2 cups of water
  • 1/2 cup maple syrup
  • 2 cinnamon sticks


Place the chopped apples and rhubarb in a large stock pot. Add the water a bit at a time -it should cover the fruit, the maple syrup and the cinnamon sticks and mix well. Bring to a boil on high heat, then reduce the heat to low, partially cover the pot, and let simmer for 30-40 minutes, until the apples are soft.

Once cooked, remove from heat. If you like a chunkier applesauce, mash with a potato masher, or process in a blender until desired consistency. I made it chunky!
