Cheese Pizza with Cauliflower Crust

Makes 2 rectangular pizzas – each pizza can be cut into 8 pieces
Ingredients:
- 1 large cauliflower, cleaned and cut into florets
- 1 cup grated cheese, mozzarella or Parmesan or combine both!
- 2 eggs, beaten
- 1/4 cup almond or potato flour
- 1/2 tsp. cayenne
- Salt and pepper, to taste
Toppings:
- Shredded cheese
- Fresh basil
Optional:
- Olives
- Roasted vegetables
- Sliced tomatoes
- Bell peppers
Directions:
Preheat oven to 450°F. Line 2 large baking sheets with parchment paper and coat each one lightly with olive oil. Set aside.
Place half the cut cauliflower in a glass bowl and microwave for 3 minutes. Repeat with the rest of the cauliflower. Pulse batches of the cauliflower in a food processor until a rice like texture forms.
In a large bowl mix the cauliflower with the grated cheese, beaten eggs, almond flour and seasonings. Mix well using your hands.
Divide the dough in half and place each mound on the prepared baking sheet. Flatten to form a rectangle. It should cover most of the baking sheet.
Bake the pizza crust for 15 minutes. I used the bottom and middle rack and switched them halfway.
When done, top with fresh basil and cheese and bake for another 6 minutes until the cheese is melted and browned.
