Blueberry Baked Oatmeal

A Few Words…

Breakfast is my favorite meal of the day and I alternate my breakfast foods ocassionaly.  It’s good to change things up every once in a while, so I like to experiment and try new recipes using ingredients from my favorite foods.

Oatmeal, blueberries and a few more ingredients added together to make a delicious baked oatmeal that’s so delicious and filling.

What a great way to start the day!

Blueberry Baked Oatmeal

Makes 6 portions


  • 2 cups rolled oats (I used the large flakes)
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 cup flax seeds, whole seeds
  • A pinch of salt
  • 2 eggs
  • 1/2 cup non dairy milk (use your favorite, I used unsweetened Vanilla Almond Milk)
  • 1/3 cup maple syrup
  • 1 tsp. vanilla extract
  • 1/4 melted butter (I used a non dairy butter)
  • 1 cup blueberries plus a few more to sprinkle on top, fresh or frozen (I used frozen blueberries)

Preheat oven to 350°F. Lightly grease a 7 x 11 baking dish.

In a medium bowl, combine the rolled oats, baking powder, cinnamon, flax seeds and salt and whisk to combine.

In a small bowl, beat the eggs. Whisk in the non dairy vanilla almond milk, maple syrup, vanilla extract and melted butter. Pour the liquid mixture evenly over the dry ingredients and stir to combine. Fold the blueberries in gently.

Spread the mixture into the prepared baking dish and add a few blueberries on top.

Bake on the bottom shelf for 35 minutes.

Serve plain or enjoy with additional blueberries or a dollop of yogurt on top.
