Asian Broccoli Salad

A Few Words…

Healthy and yummy salad that’s ready in 5 minutes!

I was looking for something to make with broccoli that didn’t require alot of dishes to wash and that used ingredients that I had on hand. I came up with an easy recipe for a broccoli salad.

This salad is so easy to make and you can easily swap some ingredients for ones that you have on hand- just don’t forget the broccoli!

Ingredients:

Sauce Ingredients:

  • ¼ cup smooth peanut butter
  • 1 tbs. rice vinegar
  • 1 tbs. low sodium tamari
  • 1 tbs. maple syrup
  • 1 tsp. sesame oil
  • 2-3 tbs. hot water, as needed to thin the sauce

Salad Ingredients:

  • 1 large broccoli, cut into bite sized florets
  • 2 cups shelled edamame
  • 1 large shallot (green onion), thinly sliced
  • 1 large red pepper, diced
  • ½ cup unsalted peanuts
  • Sesame seeds, for garnish

Directions:
The Sauce:
Whisk the peanut butter, rice vinegar, tamari, maple syrup and sesame oil together until combined. Add the hot water, 1 tablespoon at a time, until desired consistency is reached and set aside.

The Salad:
Add the broccoli to a large pot of boiling water and cook for 30 seconds. Place in a colander, rinse under cold water in order to stop the cooking process and drain well. As an alternative, you can place the broccoli in a glass bowl and microwave for a minute or two.

Put the broccoli, edamame, shallots and diced peppers in a large serving bowl. Toss with the peanut sauce, use as needed. Sprinkle the salad with peanuts and sesame seeds and serve at room temperature.
