Apricot Dijon Salmon and Broccoli

A Few Words…

I love salmon – no question about it. But, I do need to change it up a bit or else I tend to get bored eating the same things over and over again. 

So, in my quest to change things up, I decided to make this recipe upon my friend’s recommendation.

This sweet and savory glaze is delicious and you’ll be making this recipe over and over again!

Easy to make and I love that everything bakes all in one pan!

Apricot Dijon Salmon and Broccoli

Serves 4-6
Ingredients:

  • 1/4 cup apricot preserves
  • 1 tbs. unsalted butter or margarine
  • 1 tbs. honey
  • 1 1/2 tbs. dijon mustard
  • 4-6 pieces of salmon fillet with skin on
  • Pinch of salt and pepper
  • 2 heads of broccoli cut into florets
  • 2 tbs. olive oil
  • Pinch of salt and pepper

Directions:
Preheat the oven to 450°F. Line a large baking sheet with parchment paper and set aside.

Place the broccoli florets in a large bowl and toss with the olive oil, salt and pepper. Place on the baking sheet and roast for 5 minutes.

In a small saucepan combine the apricot preserves, butter, honey and dijon mustard, bring to a simmer and stir until combined. Remove from the heat and set aside. You can make the glaze ahead of time and when cooled you can marinate the salmon in a plastic baggie and keep in the fridge until you're ready to bake it.

When ready to bake push the broccoli to the sides and place the salmon fillets in the center of the baking pan. Season with salt and pepper. If you haven't marinated the salmon, spoon the glaze evenly over each fillet and then bake for 12 minutes, or until flakey and cooked through.
