Apples, Avocado & Greens!

A Few Words…

I was looking to add a new salad to my Seder meal and noticed this recipe on my computer!

I have no idea where or when I got it, but I made it and there wasn’t a morsel left! What a delicious combination of veggies paired with a really great salad dressing.

I got so many compliments that this salad will definitely be used for during the year and not only during holidays!

Apples, Avocado & Greens!

Ingredients:

Salad:

  • Mixed greens - I used a Spring Mix
  • 2 green apples, cored and cut into slices with peel on
  • 2 cans of hearts of palm, washed and cut in to slices
  • 2 stalks of celery, diced
  • 1 English cucumber, cut in half lengthwise and then slices (like half moons!)
  • 2 green onions, thinly sliced
  • 1 cup of green grapes, cut in half
  • 2 avocados, cubed
  • 1/2 cup almond slices

Dressing:

  • Juice from a freshly squeezed lime
  • 1/4 cup honey
  • 1/2 tsp. cayenne pepper
  • 1 clove garlic, minced
  • Salt and pepper, to taste (optional)
  • 1/2 cup olive oil

Directions:
Add all the salad ingredients into a large serving bowl and toss - vary the quantity depending on how many people you are serving!
In a medium glass jar, add all of the dressing ingredients, except for the oil, and shake to blend. Then addthe oil and shake vigorously so that it emulsifies.

Add the dressing to the salad as needed- you may have leftovers!
