Roasted Tomatoes

You can always find a berry bowl filled with small cherry tomatoes on my kitchen counter. I buy the huge 907g containers of the red and the assorted colored ones. They are so sweet and an easy snack.

I usually buy two boxes at a time. One is washed and set in the berry bowl and the other is waiting until the bowl needs to be replenished. But, I forgot to refill the bowl and the container just sat untouched for a few days. It’s not that the tomatoes went bad or anything, they just didn’t have the same zip and fresh taste as they normally do.

I certainly had no intentions of throwing them out! I took out a baking pan, lined it with parchment paper and into the oven they went. I wasn’t sure what I wanted to do with the roasted tomatoes and I wasn’t in the mood to cook, so I froze them.

Here’s where I would love your help! The roasted tomatoes tasted so delicious and now that they are frozen, what should I make with the them?

    They are great to put in a grilled cheese sandwich! I also use them in place of tomato sauce in eggplant parmesan. They add a really great flavor on a cauliflower crusted pizza! ( I usually roast fresh garlic with the tomatoes)
