Kale For Breakfast?
Last week I bought kale and I was so proud of myself because I cleaned it right away, chopped some for a salad and stored the rest in a large baggie lined with a paper towel. I then put the baggie in the big vegetable drawer in my fridge so I can use it the next day.
But, I didn’t use it the following day and to be honest, I kinda forgot about it. Has that ever happened to you? By the time I realized, it wasn’t fresh enough to use in a salad, but it was great to cook with. And that’s what I did!
I sautéed the kale with chopped green onion (the bulb and stem) in a tiny bit of coconut oil (you can use olive oil instead). I then added beaten eggs to the mixture and let it cook. Are you wondering what’s on top? A sprinkle of crumbled feta cheese!
Mmmmmm – great power breakfast with lots of nutrients and protein! What an amazing way to start the day 🙂
